Australia is the world's 4th biggest truffle producer and a small Western Australian town, 4 hours drive from the nearest airport has become the epicentre of truffle production in the country, exporting up to 90% of its precious harvest of tuber melanosporum, the revered black truffle to Europe, the US, the UK, Japan and beyond. 
 
 We discuss with Gavin, the growing and finding truffles, the close working relationship between truffle hunter and dog, how to store them and most importantly how to cook the luxury ingredient (hint -don't listen while hungry!)
 
Raconteur Gavin also tells us some delightful truffle-related stories and we talk about how these 'black diamonds' have bought a gourmet festival that now features on every foodies wish list, to the 'tall timber' country town of Manjimup.
