Have you ever wondered where Italians go to holiday in their own country? The answer is Puglia, an unspoiled southern region of Italy at the 'heel' of Italy's boot.

With the Adriatic on one side and the Ionian sea on the other, it has miles of ruggedly beautiful beaches, while the interior has the greatest population of olive groves in the country.

In this episode of ExtraVirgin Postcards, we talk with Silvestro Silvestori, a cooking school owner who operates out of the gorgeous baroque city of Lecce as well as holding classes in a castle 40 minutes away in the countryside.

Silvestro tells us how a little of the history of Puglia, talks about the local cuisine and wines and gives us his recommendation for  of his favourite places to try some traditional dishes of Puglia.
